The tax runs out on my car tomorrow. Didn't realise due to having other things on my mind such as all my exams. I've just paid for the new tax disc and it will take up to 5 days to deliver so that means I'll be driving with an out of date tax disc but with a new one being delivered. Can I still drive the car between now and when I get my tax disc?

Yup.

I got pulled after doing the same, quick check on the copper computer and he was happy to let me go on my way.

You can be done though for failure to display. Whether this comes under that i have no idea

From the DirectGov site

If you use the electronic vehicle licensing service or tax by post at the end of the month, there’s now an exemption for not displaying a tax disc. This exemption covers the first five working days of the month to allow time for the new disc to arrive in the post. While you are still waiting for your tax disc you will need to display your current tax disc. The exemption only applies if applications are made before the current tax disc or SORN expires

I taxed my car last summer and thought will put tax disc in next time i take the car out the garage.
Couple of weeks later, rolled car out, filled it and went on holiday to scotland for a week.

Looked at car when finally arrived, old tax disc still in windscreen, id left the new one in the kitchen at home!

Phoned dvla and told them dilemma, they just said dont worry about it, only a jobsworth traffic warden might have something to say.

I try to do it in advance now and put it in the moment it comes thro the letter box lol
